The freeze-drying of high-sugar materials has long been recognized as a technical challenge in the freeze-drying field. Taking Rosa roxburghii juice as an example, its measured sugar content is around 6g/100g, and it easily expands during drying, leading to product shape damage and quality degradation. How to keep high-sugar materials in a delicate form with rich nutrients after freeze-drying places great demands on the process expertise of equipment manufacturers.
Recently, Jiangsu Bolaike Refrigeration Technology Development Co., Ltd. (hereinafter referred to as "Bolaike"), commissioned by a client, successfully completed a highly challenging freeze-drying trial experiment for Rosa roxburghii juice. The resulting Rosa roxburghii powder after coming out of the chamber was fine and free of clumping. The vitamin C retention rate reached over 95%, and both the nutritional value and the original bright color were perfectly preserved, providing a mature and reliable process model for the freeze-drying of high-sugar materials.
To overcome such challenging materials, equipment hardware alone is far from enough; solid systemic support is required. Bolaike has a complete experimental trial system and a vast process database. In this experiment, the technical team first measured the sugar content of the Rosa roxburghii juice samples sent by the client, tailoring the process to the material. Subsequently, a Bolaike 1-square-meter silicone oil version freeze dryer was used for process testing.
Targeting the high-sugar, easy-to-expand characteristics, Bolaike's technical team leveraged the equipment's precise temperature control capability to customize a low-temperature, slow-sublimation process curve. Through staged temperature control, the expansion rate of the material was effectively controlled, avoiding the common problems of foaming and collapse seen in traditional drying.

A professional freeze-drying enterprise not only sells equipment but also provides in-depth process support. As a leading enterprise in the domestic food freeze-drying equipment industry, Bolaike can provide clients with full-process services from equipment selection to process development. It can also rely on the platform advantages of its subsidiary Xinshidai Freeze-Drying Research Institute to jointly develop freeze-drying patents with clients. At the same time, Bolaike can unite expert resources from top universities such as Jiangnan University and China Agricultural University to provide authoritative technical endorsement for clients' innovative products, helping enterprises consolidate their technical barriers.
If you also have difficult-to-process materials or are seeking process breakthroughs for high-end freeze-dried products, you are welcome to send samples to Bolaike, and we will conduct experiments for you, using our solid process system to solve your production challenges.
