Jiangsu Bolaike recently completed a freeze-drying process trial for longan at the request of a client. Longan is a prized fruit recognized under the "medicine and food homology" concept, rich in vitamins and amino acids. However, fresh longan only ripens between July and September each year, and it begins to spoil within days of harvest. Traditionally, longan can only be preserved by drying it at high temperatures into dried longan ("guiyuan"), but this heat treatment leaves only around 40% of the nutrients intact, resulting in a product with a dull color, shriveled flesh, a tough texture, and a near-total loss of the fruit's natural sweet aroma. Bolaike's freeze-drying trial used low-temperature vacuum freeze-drying technology, achieving a nutrient retention rate of over 90%. The freeze-dried longan has a bright color and a full, plump shape, with a light, crisp texture that releases the fruit's characteristic sweet aroma as soon as it's eaten. The freeze-dried flesh rehydrates almost instantly upon contact with saliva, restoring a fresh-fruit-like state. Studies show that freeze-drying significantly reduces the loss of phenolic compounds and antioxidant activity in longan flesh, with less loss of vitamin C and total sugar content compared to hot-air drying. Freeze-drying technology not only preserves the full nutritional value of longan but also elevates the value of this fruit, often referred to as "southern guiyuan," to a new level.

Freeze-drying longan places extremely high demands on equipment temperature control. Components such as amino acids and vitamins are sensitive to heat, and uneven heating can easily cause them to degrade. Bolaike's mid-sized freeze-drying equipment is fitted with dual-layer radiant plates with independent hot and cold circuits, keeping the temperature difference across the shelves within ±1°C, which prevents localized overheating that would otherwise cause the flesh to darken and lose nutrients. The upper cold circuit uses direct-contact cooling for a fast freezing rate, locking in the fruit's full nutritional content during the freezing stage. The resulting freeze-dried product holds its shape without collapsing or shrinking, with each piece appearing plump and full — resembling translucent popcorn.
