Bolaike Completes Ginger Juice Freeze-Drying Process Experiment: Freeze-Dried Ginger Juice Retains Fresh Flavor at Room Temperature


Ginger juice is known for dispelling cold and warming the stomach, making it a common health-promoting food in daily life. Most ginger juice products on the market are bagged or canned concentrates that are simply mixed with water before drinking. However, during the high-temperature sterilization process, active components such as gingerol are significantly lost, resulting in a bitter and astringent taste that lacks the fresh aroma and refreshing character of freshly squeezed ginger juice. At the same time, in liquid form, its quality continues to deteriorate during storage, requiring refrigeration and making it inconvenient to carry.

Freeze-dried ginger juice offers a completely new solution for this category. After freeze-drying, ginger juice can be stored at room temperature for a long time without any preservatives, is lightweight, and is easy to carry. When ready to drink, simply add cold or hot water to instantly restore a cup of fresh ginger juice whose aroma and taste are very close to freshly squeezed juice.

Recently, Jiangsu Bolaike Refrigeration Technology Development Co., Ltd. (hereinafter referred to as "Bolaike") completed a freeze-drying process experiment for ginger juice commissioned by a client, successfully verifying the significant advantages of freeze-drying technology in ginger juice processing.

Freeze-Drying Process: Dual Retention of Flavor and Nutrition

The flavor of ginger juice mainly comes from components such as gingerol, volatile oils, and amino acids, all of which are extremely sensitive to temperature. High-temperature processing in traditional concentrate production leads to substantial loss of flavor compounds. Freeze-drying technology operates throughout under low-temperature and low-pressure conditions, effectively avoiding the oxidation and degradation of heat-sensitive components.

Bolaike's experimental data show that freeze-dried ginger juice can maximize the retention of the natural flavor and nutritional components of fresh ginger juice. The freeze-dried ginger juice powder is light yellow in color and loose in texture; after reconstitution, it has a refreshing taste and rich aroma, with very little difference from freshly squeezed ginger juice.

Equipment Support: Bolaike Medium-Sized Freeze Dryer

To move freeze-dried ginger juice from the laboratory to large-scale production, freeze-drying equipment is key. Bolaike's medium-sized freeze-drying equipment is specifically designed for deep-processing scenarios in the food industry and performs particularly well in ginger juice freeze-drying.

The eutectic point of ginger juice is approximately -13°C. Bolaike's medium-sized freeze dryer can reach a shelf temperature of -35°C, far below the eutectic point of ginger juice, ensuring that the material is completely frozen under vacuum. The equipment is equipped with independent hot and cold circuit double-layer radiation plates. The upper cold circuit uses direct contact conduction cooling, with cooling capacity acting directly on the material surface. The freezing speed is fast, locking in the flavor compounds and nutrients of ginger juice during the pre-freezing stage. At the same time, the shelf temperature is uniform, so heat-sensitive components such as gingerol and amino acids will not be inactivated due to localized high temperatures, resulting in stable product quality.

Complete Solution: From Fresh Ginger to Freeze-Dried Finished Product
