Jiangsu BOLAIKE Completes Freeze-Drying Process Experiment on Osmanthus Flowers, Preserving Autumn Fragrance and Creating a New Value Opportunity for the Flower Tea Industry

Osmanthus is a representative flower of autumn, with a rich fragrance and a wide range of applications. It can be used to scent flower tea, as well as for adding fragrance and flavor to foods such as pastries, desserts, and coffee. However, the flowering period of osmanthus is short, and its petals are delicate. Traditional sun-drying or hot-air drying processes can easily cause the petals to change color, result in fragrance loss, and result in a reduction in nutritional components. Recently, Jiangsu BOLAIKE completed a freeze-drying process experiment on osmanthus flowers at the request of a customer, helping address this industry challenge. The experiment used BOLAIKE’s Chixindai silicone-oil version of a small freeze dryer to freeze-dry fresh osmanthus flowers under low-temperature and low-pressure conditions.

Freeze-Dried Osmanthus Flowers Retain Their Color, Shape, and Fragrance

The finished product had a golden and bright color, with the petal shape remaining complete and full, creating a clear contrast with the brown and darker appearance commonly seen in hot-air-dried osmanthus flowers. Freeze-dried osmanthus flowers were crisp, lightweight, and porous. After brewing, they rehydrated quickly, with the petals unfolding as before and the fragrance remaining clear and lasting.

Nutritional and Aroma Component Retention

In terms of nutritional retention, the freeze-drying process can help retain volatile oils, flavonoids, and other active components in osmanthus flowers, making their nutritional value closer to that of fresh osmanthus flowers. Research shows that the rehydration ratio of vacuum freeze-dried osmanthus flowers can reach 4.16 to 4.56 grams per gram, while the total flavonoid content is 35.90 to 38.42 mg per gram of dry weight. The content of aroma-active substances is also higher than that of hot-air-dried osmanthus flowers.

Shelf Life and Convenience for Distribution

After vacuum sealing, freeze-dried osmanthus flowers have a shelf life of 18 to 24 months, providing convenience for flower tea companies to expand online sales and cross-regional distribution.

Market Value of Freeze-Dried Osmanthus Flowers

From a market value perspective, freeze-dried osmanthus flowers have potential for a price premium. Taking wholesale market quotations as an example, freeze-dried osmanthus flowers are priced at approximately RMB 280 per kilogram, while ordinary hot-air-dried osmanthus flowers are priced at RMB 110 to RMB 190 per kilogram. The price difference at the retail level is also noticeable. One consumer shared that 12 grams of freeze-dried osmanthus flowers were sold for RMB 30, while 40 grams of ordinary dried osmanthus flowers were sold for RMB 12. Freeze-drying technology allows osmanthus flowers, which originally had limited added value, to achieve an increase in value.

Applications of Freeze-Dried Osmanthus Flowers

At present, freeze-dried osmanthus flowers are used in high-end flower tea, coffee flavoring, food additives, milk tea ingredients, and other applications, with market demand continuing to grow.

Freeze-Drying Equipment for Different Production Stages

To meet the different requirements of osmanthus freeze-drying from small-scale testing to mass production, BOLAIKE provides equipment support for different production stages. During the laboratory research and development stage, the Chixindai silicone-oil version of the small freeze dryer can be selected. Its independent material chamber and cold trap chamber structure, together with industrial-grade silicone-oil direct-contact cooling, provides fast pre-freezing and a small temperature difference between shelves, helping retain the fragrance and color of osmanthus flowers.

Medium-Sized Freeze-Drying Equipment for Large-Scale Production

After entering large-scale production, BOLAIKE’s medium-sized freeze-drying equipment is equipped with double-layer radiation plates with independent hot and cold circuits. The temperature difference between shelves can be controlled within ±1°C, helping maintain stable finished-product quality. The cabin-style design provides good space utilization and facilitates workshop layout. The equipment can be put into production by connecting water and electricity.
